Method
Roasting the Chicken

Prepare the Chicken
Preheat your oven to 425°F (220°C). Rinse the whole chicken and pat it dry with paper towels.

Roast the Chicken
Place the chicken in a roasting pan and roast in the preheated oven for 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is crispy. Let it rest for 15 minutes before carving.
Making the Carrot Piri Piri

Prepare the Carrots
Peel and cut the carrots into sticks. Place them on a baking sheet.

Season the Carrots
In a bowl, mix garlic (minced), red chili flakes, paprika, olive oil, and salt. Toss the carrot sticks in this mixture until well coated.

Roast the Carrots
Roast the carrots in the oven for about 25-30 minutes, until they are tender and slightly caramelized. Sprinkle with fresh parsley before serving.
Making the Garlic Labneh

Strain the Yogurt
Place a cheesecloth over a bowl and pour in the yogurt. Let it strain in the refrigerator for at least 2 hours to thicken.

Preparing the Charged Gem Lettuce

Prepare the Lettuce
Wash and dry the gem lettuce heads. Cut them in half lengthwise.

Dress the Lettuce
Drizzle olive oil and lemon juice over the cut sides of the lettuce. Season with salt to taste.
