Chicken Preparation

Preheat the Oven
Preheat your oven to 425°F (220°C).

Season the Chicken
In a small bowl, mix olive oil, salt, black pepper, thyme, lemon zest, and lemon juice. Rub this mixture all over the chicken, ensuring it’s well coated.

Roast the Chicken
Place the seasoned chicken on a roasting pan and roast in the preheated oven for about 1 hour, or until the internal temperature reaches 165°F (75°C).

Blend the Ingredients
Drain the carrots and transfer them to a blender. Add the red bell pepper, minced garlic, red chili flakes, paprika, white vinegar, honey, and salt to taste. Blend until smooth.
Garlic Labneh Preparation

Make the Labneh
In a bowl, mix the plain yogurt, minced garlic, and salt until well combined. Place the mixture in a cheesecloth or a fine mesh strainer over a bowl and let it drain in the refrigerator for at least 4 hours or overnight for a thicker consistency.

Finishing Touch
Once drained, transfer the labneh to a serving bowl. Drizzle with olive oil and sprinkle with chopped fresh mint before serving.
