Method

Roast Beef Preparation

    Prepare the Beef

    Preheat the oven to 375°F (190°C). Rub the beef roast with olive oil, salt, black pepper, garlic powder, and onion powder. Place in a roasting pan.

    Roast the Beef

    Roast the beef for about 1 hour or until it reaches an internal temperature of 135°F (57°C) for medium-rare. Remove from the oven and let it rest for at least 15 minutes before slicing thinly.

Pickled Red Onion

    Prepare the Pickling Solution

    In a saucepan, combine white vinegar, water, sugar, and salt. Bring to a simmer over medium heat, stirring until the sugar and salt dissolve.

    Pickle the Onions

    Place the thinly sliced red onion in a jar and pour the hot pickling solution over the onions. Let them sit for at least 30 minutes before using.

Calabrian Chili Aioli

    Make the Aioli

    In a bowl, mix together mayonnaise, Calabrian chili paste, and lemon juice until well combined. Adjust seasoning to taste and set aside.

Horseradish Cream

    Prepare the Cream

    In a mixing bowl, combine sour cream, prepared horseradish, salt, and black pepper. Mix until smooth and well combined.

Panino Assembly

    Assemble the Panino

    On a slice of Stirato bread, layer sliced roast beef, pickled red onion, a spread of Calabrian chili aioli, a dollop of horseradish cream, and a handful of arugula. Top with another slice of bread.

    Grill the Panino

    Heat a panini press or skillet over medium heat. Grill the assembled panino for 3-4 minutes per side until the bread is golden and crispy and the filling is warmed through.
