Dough Preparation

Activate Yeast
In a small bowl, combine warm water and active dry yeast. Let it sit for about 5-10 minutes until frothy.

Mix Dry Ingredients
In a large mixing bowl, combine all-purpose flour and sea salt. Mix well.

Combine Ingredients
Create a well in the center of the flour mixture and add the activated yeast mixture and olive oil. Stir until the dough starts to come together.

Knead Dough
Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic.

First Rise
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
Topping Preparation

Prepare Leeks
Wash the leeks thoroughly, slice them thinly, and sauté them in 1 tablespoon of olive oil over medium heat until soft, about 5 minutes.

Prepare Potatoes
Peel and thinly slice the potato. You can use a mandoline for uniform slices.

Prepare Rosemary
Chop fresh rosemary leaves finely.
Baking

Preheat Oven
Preheat your oven to 425°F (220°C).

Shape Dough
Once the dough has risen, punch it down and transfer it to a greased baking sheet. Stretch and flatten the dough to fit the sheet.

Add Toppings
Evenly distribute the sautéed leeks and potato slices over the surface of the dough. Sprinkle with chopped rosemary, Parmigiano Reggiano cheese, and additional sea salt.

Drizzle Olive Oil
Drizzle the remaining tablespoon of olive oil over the top of the focaccia.

Final Rise
Cover the focaccia with a cloth and let it rise for another 20-30 minutes.

Bake in the preheated oven for 20-25 minutes or until golden brown and crispy on the edges.

Remove from the oven and let it cool for a few minutes. Cut into squares and serve warm.
