    Prepare the Farro

    Rinse the farro under cold water to remove any debris. In a medium pot, combine the rinsed farro, vegetable broth, and a pinch of salt. Bring to a boil over medium-high heat.

    Cook the Farro

    Once boiling, reduce the heat to low, cover, and let it simmer for about 30 minutes or until the farro is tender and the liquid is absorbed. Stir occasionally to prevent sticking. If the farro is not tender after 30 minutes, add a little more broth or water and continue cooking.

    Sauté Garlic

    While the farro cooks, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn it.

    Combine Ingredients

    Once the farro is cooked, add it to the skillet with the sautéed garlic. Pour in the beer and stir to combine. Cook for an additional 5 minutes, allowing the beer to reduce slightly and the flavors to meld.

    Finish the Dish

    Remove the skillet from heat and stir in the chopped parsley, black pepper, and additional salt to taste. Grate the pecorino cheese over the top of the farro mixture before serving.
