Making the Dough

    Combine Ingredients

    In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and crack the eggs into the well. Add the olive oil.

    Mix the Dough

    Using a fork, begin to whisk the eggs, gradually incorporating the flour from the edges of the well. Continue until the mixture becomes too thick to mix with a fork.

    Knead the Dough

    Transfer the dough onto a floured surface. Knead the dough for about 8-10 minutes until it is smooth and elastic. If the dough is sticky, sprinkle a little more flour as needed.

    Rest the Dough

    Wrap the kneaded dough in plastic wrap or cover it with a clean kitchen towel. Let it rest for at least 30 minutes at room temperature.

Rolling and Cutting

    Divide the Dough

    Once the dough has rested, divide it into 4 equal pieces to make it easier to roll out.

    Roll the Dough

    Using a rolling pin or a pasta machine, roll out one piece of dough at a time on a floured surface until it is thin (about 1/16 inch thick).

    Cut the Pasta

    Cut the rolled-out dough into your desired shape (fettuccine, tagliatelle, etc.) using a sharp knife or a pasta cutter. Dust the cut pasta with flour to prevent sticking.
