Panna Cotta Base

Method

Panna Cotta Base

  1. 1

    Prepare Gelatin

In a small bowl, sprinkle gelatin over cold water. Let it sit for about 5 minutes until it blooms.

  2. 2

    Heat Cream and Sugar

In a saucepan, combine heavy cream and granulated sugar. Heat over medium heat, stirring occasionally, until the sugar dissolves and the mixture is hot but not boiling.

  3. 3

    Add Vanilla and Gelatin

Remove the saucepan from heat. Stir in the vanilla extract and the bloomed gelatin until fully dissolved.

  4. 4

    Chill the Mixture

Pour the panna cotta mixture into individual serving cups or molds. Refrigerate for at least 4 hours or until set.

Berry Coulis

  1. 5

    Prepare Berries

In a saucepan, combine fresh mixed berries and granulated sugar. Cook over medium heat, stirring gently until the berries start to break down and release their juices, about 5-7 minutes.

  2. 6

    Blend the Mixture

Remove from heat and let cool slightly. Blend the mixture until smooth, then strain through a fine mesh sieve to remove seeds, if desired.

  3. 7

    Finish Coulis

Stir in lemon juice to enhance the flavor. Let the coulis cool completely before serving.
