Juice the Lemons
Cut the lemons in half and juice them using a citrus juicer or by hand. Strain the juice to remove any seeds and excess pulp, if desired.

In a clean glass bottle or jar, combine the extra virgin olive oil, lemon zest, and lemon juice. If using, add the minced garlic and chopped fresh herbs at this stage.

Add sea salt to the mixture and stir or shake gently to combine all the ingredients thoroughly.

Infuse the Oil
Seal the bottle or jar and let the mixture sit at room temperature for 24-48 hours to allow the flavors to meld together. For a stronger flavor, you can store it in the refrigerator for up to a week.

Before serving, shake the bottle gently to mix the ingredients. Drizzle over salads, grilled vegetables, or use as a dipping oil for bread.
