Ingredients for Olive Oil Cerasualo

Method

Preparation Steps

  1. 1

    Prepare the Ingredients

Begin by washing the fresh basil leaves under cold water. Pat them dry with a clean kitchen towel. Peel the garlic cloves and set aside.

  2. 2

    Infuse the Olive Oil

In a medium saucepan, combine the 500 ml of extra virgin olive oil with the prepared basil leaves and garlic cloves. Heat the mixture over low heat for about 10-15 minutes, allowing the flavors to infuse. Do not let it boil, as this can damage the olive oil.

  3. 3

    Add Seasoning

After the oil has been infused, remove the saucepan from heat. Stir in the red chili flakes, salt, black pepper, and lemon zest. Mix well to combine all the flavors.

  4. 4

    Strain the Oil

Allow the infused oil to cool to room temperature. Once cooled, strain the oil through a fine mesh sieve or cheesecloth into a clean glass bottle, discarding the solids.

  5. 5

    Bottle the Cerasualo

Transfer the strained olive oil into a 500 ml bottle, preferably one with a dark glass to protect the oil from light. Seal the bottle tightly.

  6. 6

    Store and Serve

Store the Olive Oil Cerasualo in a cool, dark place. It can be used as a dressing for salads, drizzled over vegetables, or as a dipping oil for bread.
