Preheat the Oven
Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

Mix Dry Ingredients
In a large mixing bowl, whisk together the all-purpose flour, baking powder, salt, and granulated sugar until well combined.

In another bowl, whisk together the olive oil, eggs, milk, vanilla extract, and lemon zest until smooth.

Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. Do not overmix.

Pour the batter into the prepared cake pan and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.

Remove the cake from the oven and allow it to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

In a medium saucepan over medium heat, combine the mixed berries, granulated sugar, and lemon juice.

Cook the mixture, stirring occasionally, until the berries break down and the mixture thickens, about 10 minutes.
