    Harvesting Olives

    Hand harvest olives from the trees, ensuring minimal damage to the fruit.

    Washing Olives

    Wash the harvested olives thoroughly to remove dirt and impurities.

    Crush the olives using a stone mill or mechanical crusher to create a paste.

    Malaxing

    Mix the olive paste for about 20-40 minutes at a controlled temperature to allow the oil to separate from the solids.

    Press the malaxed olive paste using a hydraulic press to extract the oil.

    Allow the extracted oil to settle for a few hours, then decant to remove any remaining solids.
