Preparation of Mussels

    Rinse the mussels under cold running water, scrubbing the shells with a brush to remove any dirt or debris. Remove the beards (the fibrous threads) from the mussels, if present.

    In a large pot, bring 1 cup of water to a boil. Add the cleaned mussels, cover the pot, and steam for about 5-7 minutes or until the mussels open up. Discard any mussels that remain closed.

    In a medium bowl, combine the sherry vinegar, olive oil, minced garlic, sliced red onion, chopped cilantro, sliced chili, salt, pepper, and sugar. Mix well until all ingredients are combined.

Combining and Marinating

    Once the mussels are cooked and slightly cooled, remove them from their shells and place them in a glass jar or bowl. Pour the marinade over the mussels, ensuring they are well-coated.

    Cover the jar or bowl and refrigerate for at least 1 hour, allowing the flavors to meld. For best results, marinate overnight.
