Method

Preparation

  1. 1

    Mix Dry Ingredients

In a large mixing bowl, combine whole wheat flour, oats, barley flour, all-purpose flour, flaxseed meal, baking powder, and salt. Whisk together until well combined.

  2. 2

    Prepare Yeast Mixture

In a separate bowl, mix warm water, honey, vegetable oil, and yeast. Stir gently and let it sit for about 5 minutes, or until it becomes frothy.

Mixing and Kneading

  1. 3

    Combine Mixtures

Once the yeast mixture is frothy, pour it into the dry ingredients. Stir with a wooden spoon until a dough begins to form.

  2. 4

    Knead the Dough

Transfer the dough to a floured surface and knead for about 8-10 minutes until the dough is smooth and elastic.

Rising and Baking

  1. 5

    First Rise

Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

  2. 6

    Shape the Dough

Once risen, punch down the dough to release air. Shape it into a small loaf or desired shape.

  3. 7

    Second Rise

Place the shaped dough on a baking sheet lined with parchment paper. Cover with a cloth and let it rise for another 30 minutes.

  4. 8

    Preheat Oven

Preheat the oven to 375°F (190°C).

  5. 9

    Bake

Bake the bread in the preheated oven for about 25-30 minutes, or until the crust is golden brown and it sounds hollow when tapped on the bottom.

Finishing

  1. 10

    Cool and Serve

Remove the bread from the oven and let it cool on a wire rack. Slice and serve warm or at room temperature.
