    Start by trimming any excess fat from the pork loin. Pat the meat dry with paper towels to ensure a good sear.

    Season the Meat

    In a small bowl, combine sea salt, black pepper, garlic powder, and dried thyme. Rub this spice mixture all over the pork loin, ensuring it is evenly coated.

    Marinate

    Place the seasoned pork loin in a resealable plastic bag or a shallow dish. Pour red wine over the meat, ensuring it is submerged. Seal the bag (or cover the dish) and marinate in the refrigerator for at least 4 hours, preferably overnight.

    Preheat your oven to 375°F (190°C).

    In a large oven-safe skillet, heat olive oil over medium-high heat. Once hot, remove the pork loin from the marinade and sear it in the skillet for about 3-4 minutes on each side until browned.
