Grilled Shishitos

    Prepare the Peppers

    Wash the shishito peppers and pat them dry. Toss them in a bowl with olive oil and sea salt, ensuring they are evenly coated.

    Grill the Peppers

    Preheat your grill or a grill pan over medium-high heat. Once hot, place the shishito peppers on the grill. Grill for about 5-7 minutes, turning occasionally until they are blistered and slightly charred. Remove from grill and set aside.

Ajo Blanco

    Blend the Ingredients

    In a blender, combine the blanched almonds, garlic cloves, stale bread, water, olive oil, white wine vinegar, and salt. Blend until smooth and creamy.

    Chill the Soup

    Transfer the ajo blanco to a bowl and refrigerate for at least 30 minutes to allow the flavors to meld.

Brown Butter Ponzu

    Brown the Butter

    In a saucepan over medium heat, melt the butter. Continue cooking, stirring frequently until the butter turns a golden brown and has a nutty aroma, about 5-7 minutes.

    Add Remaining Ingredients

    Remove the pan from heat and stir in the soy sauce, yuzu juice, and mirin until well combined. Finely chop the scallions and add them to the mixture. Let it cool slightly before serving.
