Calabrian Aioli Preparation

    Make the Calabrian Aioli

    In a medium bowl, combine mayonnaise, Calabrian chili paste, minced garlic, lemon juice, and salt. Mix well until smooth and creamy. Taste and adjust seasoning if necessary.

Vegetable Preparation

    Prepare the Vegetables

    Slice the bell peppers and onion into thin strips. Heat olive oil in a grill pan over medium-high heat. Add the sliced bell peppers and onion, season with salt, pepper, and oregano. Grill for about 5-7 minutes, stirring occasionally, until vegetables are tender and slightly charred.

Chorizo Cooking

    Cook the Green Chorizo

    In the same grill pan, add the green chorizo. Cook for about 5-6 minutes, breaking it apart with a spatula, until fully cooked and browned.

Panino Assembly

    Assemble the Panino

    Slice the ciabatta bread in half horizontally. Spread a generous amount of the Calabrian aioli on both sides of the bread. Layer the grilled vegetables and cooked chorizo on one half, then close with the other half.

    Preheat the grill pan over medium heat. Place the assembled panino on the grill and press down with a spatula. Grill for about 3-4 minutes on each side, or until the bread is golden brown and crispy.
