Preparing the Sausage

    Mix the Ingredients

    In a large mixing bowl, combine the ground pork, Calabrian chili paste, fresh oregano, minced garlic, salt, and black pepper. Mix thoroughly until all ingredients are evenly incorporated.

    Form the Sausages

    Using your hands, form the mixture into small sausage links or patties, about 3-4 inches long.

Grilling the Vegetables

    Prepare the Vegetables

    Slice the bell peppers into strips and cut the red onion into thick rings.

    Grill the Vegetables

    Preheat a grill or grill pan over medium-high heat. Toss the sliced bell peppers and onion with a little olive oil and grill until they are tender and slightly charred, about 5-7 minutes. Remove from grill and set aside.

Making the Calabrian Aioli

    Combine Aioli Ingredients

    In a small bowl, mix together the mayonnaise, Calabrian chili paste, lemon juice, minced garlic, and salt. Stir until well combined.

Cooking the Sausages

    Grill the Sausages

    Place the sausage links or patties on the grill over medium heat. Cook for about 6-8 minutes, turning occasionally, until they are cooked through and have nice grill marks.

Serving

    Serve the grilled sausages topped with the grilled bell peppers and red onions. Drizzle with the Calabrian aioli for added flavor.
