Dough Preparation

    Activate the Yeast

    In a small bowl, combine 100 ml of warm water (not hot) and the active dry yeast. Allow it to sit for about 5-10 minutes until frothy.

    Mix the Dough

    In a large mixing bowl, combine the all-purpose flour and salt. Then, create a well in the center and add the activated yeast mixture, the remaining water (250 ml), and olive oil.

    Knead the Dough

    Mix the ingredients until a rough dough forms. Transfer the dough onto a floured surface and knead for about 10 minutes until smooth and elastic.

    First Rise

    Place the kneaded dough in a lightly greased bowl, cover with a damp cloth, and let it rise in a warm area for about 1 hour or until doubled in size.

Shaping and Baking

    Shape the Dough

    Once the dough has risen, punch it down to release the air. Divide the dough into two equal portions and shape each portion into an elongated loaf.

    Second Rise

    Place the shaped loaves on a baking tray lined with parchment paper. Cover them with a cloth and let them rise for another 30 minutes.

    Preheat the Oven

    While the loaves are rising, preheat the oven to 220°C (428°F).

    Add Toppings and Bake

    Before baking, brush the tops of the loaves with a little water and sprinkle sesame seeds and sea salt on top. Bake in the preheated oven for about 25-30 minutes or until golden brown and hollow sounding when tapped on the bottom.

    Remove the loaves from the oven and let them cool on a wire rack for at least 15 minutes before slicing.
