Cooking the Farro

Prepare the Farro
In a medium saucepan, bring 3 cups of water to a boil. Add the cup of farro and a pinch of salt. Reduce the heat to low, cover, and simmer for about 30 minutes, or until the farro is tender. Drain any excess water and let it cool.

Combine Ingredients
In a large mixing bowl, combine the cooled farro, chopped cucumbers, shallots, radishes, kale, mint, and parsley. Mix thoroughly to ensure even distribution of ingredients.
Adding Dressing

Make the Dressing
In a small bowl, whisk together the lemon juice, salt, black pepper, and Sicilian olive oil until combined.

Pour the dressing over the salad mixture and toss gently to coat all the ingredients evenly.

Crumble the Salva Cremasco cheese over the top of the salad as a final touch.
