Method

Cooking the Farro

    Prepare the Farro

    In a medium saucepan, bring 3 cups of water to a boil. Add the cup of farro and a pinch of salt. Reduce the heat to low, cover, and simmer for about 30 minutes, or until the farro is tender. Drain any excess water and let it cool.

Preparing the Vegetables

    Chop the Vegetables

    While the farro is cooking, wash and chop the roman cucumber, shallots, radish, and kale. Dice the cucumber and shallots, slice the radishes thinly, and remove the stems from the kale before chopping it into bite-sized pieces.

Mixing the Salad

    Combine Ingredients

    In a large mixing bowl, combine the cooled farro, chopped cucumbers, shallots, radishes, kale, mint, and parsley. Mix thoroughly to ensure even distribution of ingredients.

Adding Dressing

    Make the Dressing

    In a small bowl, whisk together the lemon juice, salt, black pepper, and Sicilian olive oil until combined.

    Dress the Salad

    Pour the dressing over the salad mixture and toss gently to coat all the ingredients evenly.

Garnishing

    Add Cheese

    Crumble the Salva Cremasco cheese over the top of the salad as a final touch.
