Prepare Artichokes

    Trim the Artichokes

    Start by trimming the stems of the artichokes to about 1 inch. Remove the outer leaves until you reach the pale inner leaves.

    Cut and Clean

    Cut the top 1/3 off each artichoke with a sharp knife. Use a spoon to scoop out the fuzzy choke from the center.

    Cook the Artichokes

    In a large pot, bring salted water to a boil. Add artichokes and cook for 15-20 minutes until they are tender. Drain and let them cool.

Prepare Preserved Lemon Mixture

    Prepare the Preserved Lemon

    Rinse the preserved lemon under cold water to remove excess salt. Cut it in half and remove the seeds. Chop the flesh finely.

    Prepare Garlic and Parsley

    Mince the garlic cloves and finely chop the fresh parsley.

    Combine Ingredients

    In a small bowl, mix the chopped preserved lemon, minced garlic, and chopped parsley together. Set aside.

Fry the Artichokes

    Heat the Oil

    In a large skillet, heat the olive oil over medium-high heat until shimmering.

    Fry the Artichokes

    Cut the cooked artichokes in half and carefully place them cut side down in the hot oil. Fry for about 5-7 minutes until they are golden brown and crispy.

    Season and Serve

    Remove the artichokes from the skillet and drain on paper towels. Season with salt and black pepper to taste. Serve warm with the preserved lemon mixture on the side.
