    Wash the new potatoes thoroughly under cold water to remove any dirt. Pat them dry with a clean kitchen towel.

    Preheat your oven to 300°F (150°C). This low temperature is essential for the confit process.

Cooking

    Combine Ingredients

    In a large, oven-safe pot or Dutch oven, combine the new potatoes, olive oil, garlic cloves (smashed), salt, and black pepper. Ensure the potatoes are fully submerged in the oil.

    Place the pot in the preheated oven and allow the potatoes to cook slowly for about 1.5 to 2 hours, or until they are fork-tender and infused with flavor.

    Prepare Scallions and Parsley

    While the potatoes are cooking, finely chop the scallions and fresh parsley. Set aside for garnishing.
