Prepare the Potatoes
Wash the new potatoes thoroughly under cold water to remove any dirt. Pat them dry with a clean kitchen towel.

Preheat the Oven
Preheat your oven to 300°F (150°C). This low temperature is essential for the confit process.

Combine Ingredients
In a large, oven-safe pot or Dutch oven, combine the new potatoes, olive oil, garlic cloves (smashed), salt, and black pepper. Ensure the potatoes are fully submerged in the oil.

Prepare Scallions and Parsley
While the potatoes are cooking, finely chop the scallions and fresh parsley. Set aside for garnishing.

Serve
Once the potatoes are done, remove them from the oven and let them cool slightly. Transfer the potatoes to a serving dish, drizzle some of the confit oil over them, and garnish with chopped scallions and parsley.
