Dough Preparation

Combine Yeast and Water
In a large mixing bowl, combine 1.5 cups of warm water and 2 teaspoons of active dry yeast. Stir gently and let it sit for about 5-10 minutes until frothy.

In a separate bowl, whisk together 4 cups of bread flour and 2 teaspoons of salt.

Once the yeast is frothy, add the flour mixture to the yeast mixture. Mix gently with a wooden spoon until a wet and sticky dough forms. You can also use a stand mixer fitted with a dough hook.

Knead the dough on a floured surface for about 5-7 minutes or until it becomes smooth and elastic. Alternatively, knead using a stand mixer on medium speed for about 5 minutes.

Transfer the dough to a large greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1-2 hours or until it has doubled in size.

Shape the Dough
Once the dough has risen, sprinkle a little flour on your work surface. Gently turn the dough out onto the surface, trying not to deflate it too much. Divide the dough into two equal pieces.

Shape each piece into a rough rectangle by stretching and folding the dough. Transfer each loaf to a parchment-lined baking sheet dusted with semolina flour or cornmeal.
