Preparation of Ingredients

    Prepare the Vegetables

    Slice the red and yellow bell peppers into strips and the red onion into thin rings.

    Cook the Chorizo

    Remove the chorizo sausage from its casing and crumble it into a hot skillet. Cook over medium heat for about 5-7 minutes until browned and fully cooked.

Making Calabrian Aioli

    Mix the Aioli Ingredients

    In a small bowl, combine mayonnaise, Calabrian chili paste, minced garlic, lemon juice, and salt. Mix well until smooth and set aside.

Cooking and Assembly

    Grill the Vegetables

    In the same skillet used for chorizo, add olive oil and sauté the sliced bell peppers and red onion over medium-high heat for about 5-7 minutes until they are tender and have nice grill marks.

    Assemble the Panino

    Spread a generous layer of Calabrian aioli on one side of each slice of stirato bread. On one slice, layer the cooked chorizo, grilled bell peppers, red onion, and a sprinkle of dried oregano. Top with the other slice of bread, aioli side down.

    Grill the Panino

    In a skillet or panini press, heat the sandwich on medium heat for about 4-5 minutes on each side until the bread is crispy and golden brown.
