Cooking Pasta

Boil Water
Bring a large pot of salted water to a boil.

Cook Spaghetti
Add the spaghetti to the boiling water and cook according to package instructions, usually 8-10 minutes, until al dente.

Reserve Pasta Water
Reserve about 1 cup of the pasta cooking water before draining the spaghetti.
Preparing Sauce

Mix Cheeses
In a large mixing bowl, combine the grated Pecorino Romano and Parmigiano Reggiano cheeses.

Add Black Pepper
Add the freshly cracked black pepper to the cheese mixture and stir well.

Combine Pasta and Sauce
Add the drained spaghetti to the bowl with the cheese and pepper mixture.

Add Pasta Water
Slowly add reserved pasta water, a little at a time, while tossing the spaghetti to create a creamy sauce.

Finish Sauce
Continue adding water until the desired creaminess is reached. Make sure the pasta is well coated.

Serve immediately with an extra sprinkle of black pepper and additional grated cheese if desired.
