Prepare the Meat
Cut the pork shoulder, pork fatback, and beef chuck into small cubes (about 1 inch).

Blend the Ingredients
In a large bowl, combine the meat cubes with kosher salt, black pepper, crushed red pepper flakes, garlic powder, dried oregano, and fennel seeds. Mix thoroughly to ensure the spices are evenly distributed.

Prepare Casings
Soak the natural hog casings in cold water for at least 30 minutes. Rinse them thoroughly under running water to remove any excess salt.

Stuff the Mixture
Use a sausage stuffer to fill the soaked hog casings with the meat mixture. Twist into 1/4 lb links and tie off the ends with kitchen twine.
