Cooking Pasta

Boil Water
Fill a large pot with water, add salt, and bring it to a rolling boil over high heat.

Cook Bucatini
Add 400g of bucatini pasta to the boiling water. Cook according to package instructions until al dente, usually about 9-11 minutes.

Reserve Pasta Water
Before draining the pasta, reserve 1 cup of the pasta cooking water. Then drain the pasta and set it aside.
Making the Sauce

Prepare the Sauce
In a large mixing bowl, combine 150g of grated pecorino romano cheese and 2 tsp of freshly cracked black pepper. Mix well.

Combine Pasta and Sauce
Add the drained bucatini pasta to the mixing bowl with the cheese and pepper mixture.

Add Pasta Water
Gradually add the reserved 1 cup of pasta cooking water, a little at a time, while tossing the pasta to create a creamy sauce that coats the bucatini.

Adjust Seasoning
Taste the pasta and add salt to taste, if necessary. Continue tossing until the sauce is creamy and evenly coats the pasta.
Serving

Plate and Serve
Divide the bucatini cacio e pepe among plates and garnish with additional grated pecorino romano and cracked black pepper if desired. Serve immediately.
