    Prepare the Ingredients

    Chop the tomatoes into bite-sized pieces and set aside. Slice the onion into thin rings. Cut the house-cured bacon into small pieces. Tear the fresh mozzarella into smaller chunks.

    Roast the Onions

    Preheat your oven to 190°C (375°F). Place the sliced onions on a baking sheet, drizzle with 1 tablespoon of olive oil, and sprinkle with salt and black pepper. Roast in the oven for about 20-25 minutes or until the onions are golden and caramelized. Stir halfway through for even roasting.

    Cook the Bacon

    In a large skillet over medium heat, add the chopped bacon. Cook until crispy, about 5-7 minutes. Once done, remove the bacon from the skillet and set aside, leaving the rendered fat in the pan.

    Combine Ingredients

    In the same skillet with the bacon fat, add the roasted onions, chopped tomatoes, and cooked bacon. Stir in the dried oregano, and season with salt and black pepper to taste. Cook for another 2-3 minutes until everything is heated through.

    Add Cheese

    Lower the heat and add the torn fresh mozzarella to the skillet. Stir gently until the cheese starts to melt, about 2 minutes. Remove from heat.

Serving

    Plate the Dish

    Serve the bacon and onion mixture warm, garnished with additional black pepper if desired. Enjoy!
