Method

Chocolate Biscotti

    Prepare the Dough

    In a large bowl, mix together all-purpose flour, cocoa powder, granulated sugar, baking powder, and salt.

    Combine Wet Ingredients

    In another bowl, whisk the eggs and vanilla extract until well combined.

    Mix Together

    Add the wet ingredients to the dry ingredients and mix until just combined. Fold in the chocolate chips.

    Shape the Dough

    Divide the dough in half and shape each half into a log, about 12 inches long and 3 inches wide on a baking sheet lined with parchment paper.

    Bake

    Bake in a preheated oven at 350°F (175°C) for 25-30 minutes, or until the logs are firm.

    Slice and Bake Again

    Remove from the oven, let cool for 10 minutes, then slice into 1-inch thick pieces and return to the oven for an additional 10-15 minutes until crisp.

Anise Biscotti

    Stir the wet ingredients into the dry ingredients until a dough forms.

    Shape Cookies

    Using a tablespoon, scoop out the dough and roll them into balls, then press a few pine nuts into the top of each ball.

    Place the shaped cookies on a lined baking sheet and bake at 350°F (175°C) for 15-20 minutes or until lightly golden.
