Preparation

    Preheat Oven

    Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

    Mix Dry Ingredients

    In a large bowl, whisk together the all-purpose flour, almond flour, granulated sugar, baking powder, and salt until well combined.

Mixing

    Cream Butter and Sugar

    In another bowl, cream the softened unsalted butter and sugar until light and fluffy, about 3-4 minutes.

    Add Egg and Vanilla

    Add the egg and vanilla extract to the butter mixture and beat until fully incorporated.

    Combine Mixtures

    Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.

Baking

    Form Cookies

    Using a spoon or cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart. If using, sprinkle sliced almonds on top of each cookie.

    Bake

    Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden.

    Cool Cookies

    Remove the cookies from the oven and allow them to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
