Brew 2 cups of strong Guatemalan coffee using your preferred method (drip, French press or pour-over). Aim for a concentrated, flavorful brew. While the coffee is hot, stir in 1 tablespoon of dark roasted espresso or concentrated coffee to deepen the flavor. Keep hot.

In a small saucepan over medium-low heat, combine 1 cup whole milk, 1/4 cup heavy cream, 1/2 teaspoon ground cinnamon, 1/8 teaspoon ground cardamom, 1/2 teaspoon vanilla extract, and 1 teaspoon sugar. Warm gently until the mixture is steaming and small bubbles appear at the edges—do not boil. Stir to dissolve sugar and bloom spices, about 2–3 minutes.

Make the lava
Place 2 oz finely chopped dark chocolate, 1 teaspoon unsalted butter, and 1 teaspoon agave or honey in a small heatproof bowl. Set the bowl over a small pot of barely simmering water (double boiler) or microwave in 10–15 second bursts, stirring between bursts, until the chocolate is melted and glossy and the butter is incorporated. The sauce should be thick and pourable. If using, stir in 1 teaspoon Kahlúa or rum for depth.

Spoon the warm chocolate lava into the center of each coffee cup so it sinks slightly and begins to create a rich 'lava' pocket. The contrast of hot coffee and molten chocolate mimics the volcano concept.

Gently ladle the remaining spiced milk foam over each cup, creating a soft dome of foam that partially covers the chocolate pocket. Dust each cup lightly with cocoa powder (about 1/4 teaspoon per cup).

Sprinkle toasted pepitas or chopped roasted peanuts around the foam to evoke the volcanic terrain and add texture. Serve immediately so the guest can stir the chocolate into the coffee, releasing the molten 'lava' through the spiced foam.
