Dry Tea & Flavor Base

Soluble Mouthfeel & Appearance
Single-Serve Packet Yield (for packing)
Method
Prepare Dry Ingredients
- 1
Sift and combine
Sift the instant green tea powder and instant jasmine tea powder through a fine mesh sieve into a large, dry mixing bowl to remove lumps and ensure even particle size.
- 2
Add sugars and citric acid
Add the granulated sugar, demerara sugar, and citric acid to the bowl. Mix thoroughly with a dry whisk or silicone spatula until the color is uniform and no pockets of citric acid or large sugar crystals remain.
- 3
Add Aromatics and Stabilizers
- 4
Add powdered aromatics
Add the ginger powder, vanilla powder, and ground cardamom to the bowl. Whisk gently to distribute the spices evenly through the dry base.
- 5
Add liquid extracts as micro-droplets
Place the bowl on a sheet of parchment. Add the aerated lemon oil or lemon extract dropwise across the surface (use a pipette or dropper). Immediately fold the mixture repeatedly so the small droplets are absorbed and spread; this preserves aroma while minimizing clumping. Work quickly but gently.
- 6
Incorporate mouthfeel agents and color
Add the maltodextrin, optional turmeric powder for golden tint, and optional microcrystalline cellulose or powdered silica. Whisk until all powders are homogenous and the mixture has a consistent texture that flows freely.
Adjust, Test, and Scale
- 7
Taste and solubility test
Weigh roughly 10 g of the blend (one approximate packet) and stir into 250 ml (1 cup) of hot water (80–90°C) for an instant serving test. Taste for balance: brightness (citric acid/citrus), sweetness, and tea strength. If too bright, reduce citric acid by 1/8–1/4 tsp per batch; if too sweet, reduce sugar slightly; if weak, increase green tea powder incrementally. For a colder beverage, test solubility in 250 ml cool water and note any clumping issues.
- 8
Adjust anti-caking or body
If the blend clumps when exposed to humidity or does not dissolve well, add up to 1 tsp more powdered silica or 1–2 tbs more maltodextrin per batch and remix thoroughly. Re-test solubility until satisfied.
- 9
Portion into packets
Using a digital scale set to grams, portion approximately 10 g of the final blend into single-serve heat-sealable foil or Mylar packets. Press out air and seal immediately to preserve aroma and prevent humidity ingress. Label each packet with preparation instructions: 'Add packet to 250 ml hot water (80–90°C), stir until dissolved. Serve hot or over ice.'
Storage and Serving
- 10
Store sealed packets in a cool, dry place away from direct sunlight. Use within 9–12 months for best flavor. Once opened, use contents promptly and reseal in an airtight container with a desiccant pack.
- 11
To prepare: empty one packet (approx. 10 g) into 250 ml hot water (80–90°C). Stir vigorously for 15–30 seconds until dissolved. For iced preparation, dissolve in 60–80 ml hot water, then add cold water and ice to reach 250–300 ml total for improved solubility.
