Preparation of Beef

Select and Trim Beef
Select high-quality beef tenderloin and ensure it is fresh. Trim any excess fat and sinew from the meat.

Freeze Beef for Slicing
Freeze the beef tenderloin for about 1-2 hours until it is firm but not completely frozen. This will make it easier to slice.

Slice the Beef
Using a sharp knife, slice the beef tenderloin thinly against the grain into fine strips. Aim for slices about 1-2 mm thick.
Mixing Seasoning

Prepare the Seasoning
In a mixing bowl, combine sesame oil, soy sauce, sugar, minced garlic, black pepper, and sesame seeds. Whisk together until well combined.

Mix Beef with Seasoning
Add the sliced beef to the bowl with the seasoning mixture. Use a pair of chopsticks or your hands to gently mix the beef with the seasoning until evenly coated.
Garnishing and Serving

Plate the Beef
Plate the seasoned beef mixture on a serving dish, arranging it neatly. Make a small indentation in the center.

Add Egg Yolk
Place the egg yolk in the center indentation of the beef. This adds richness and flavor when mixed.

Sprinkle the finely chopped chives and thinly sliced radish over the beef as garnish.
