Dumpling Wrapper Preparation

Make the Dough
In a mixing bowl, combine all-purpose flour and salt. Gradually add water while mixing until a dough forms. Knead the dough on a floured surface for about 5 minutes until smooth and elastic.

Rest the Dough
Cover the dough with a damp cloth and let it rest for at least 30 minutes to relax the gluten.
Filling Preparation

Prepare the Filling
Chop the shrimp into small pieces and place them in a bowl. Add green onions, minced ginger, soy sauce, sesame oil, and cornstarch. Mix well until all ingredients are combined.
Assembly

Form the Dumplings
Divide the rested dough into small pieces and roll each piece into a thin circle. Place a small amount of the shrimp filling in the center of each wrapper and fold the edges up, pinching to seal.
Steaming

Steam the Dumplings
Prepare your steamer by lining it with parchment paper or cabbage leaves to prevent sticking. Arrange the dumplings in the steamer, making sure they are not touching. Steam over boiling water for about 8-10 minutes until the shrimp are cooked through.
