Dumpling Wrapper Preparation

    In a mixing bowl, combine the all-purpose flour and salt. Gradually add water while mixing until a dough forms. Knead the dough on a floured surface for about 5-7 minutes until it becomes smooth and elastic.

    Rest the Dough

    Cover the dough with a damp cloth and let it rest for at least 30 minutes to allow the gluten to relax.

Filling Preparation

    Prepare the Filling

    In a mixing bowl, combine the crab meat, green onions, minced ginger, soy sauce, sesame oil, salt, and white pepper. Mix gently to combine all ingredients without breaking up the crab meat too much.

Dumpling Assembly

    Roll the Dough

    After the dough has rested, divide it into small pieces (about 1-inch each). Roll each piece into a thin circle, about 3 inches in diameter.

    Fill the Dumplings

    Place a small spoonful of the crab filling in the center of each wrapper. Gather the edges of the wrapper and pinch them together to form a dumpling shape, ensuring it is sealed well.

Steaming

    Set up a steamer basket over a pot of boiling water. Line the basket with parchment paper or cabbage leaves to prevent sticking.

    Place the dumplings in the steamer basket, making sure they do not touch. Cover and steam for about 10-12 minutes until the dumplings are cooked through and translucent.
