Preparation of Ingredients

    Prepare the Chicken or Beef

    Cut the chicken breast or beef sirloin into bite-sized pieces, approximately 2-3 cm cubes.

    Prepare the Vegetables

    Chop the bell pepper into squares, slice the zucchini into thick rounds, and clean the mushrooms. Cut the green onions into 3-inch lengths.

Making the Teriyaki Sauce

    Combine Ingredients

    In a small saucepan, combine soy sauce, mirin, sake, and brown sugar. Stir well.

    Cook the Sauce

    Heat the saucepan over medium heat. Bring the mixture to a gentle simmer, stirring occasionally until the sugar is dissolved and the sauce thickens slightly, about 5-7 minutes. Set aside to cool.

Assembling the Skewers

    Soak Skewers

    If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.

    Thread the chicken or beef, bell pepper, zucchini, mushroom, and green onion onto the soaked skewers, alternating between meat and vegetables.

Grilling the Skewers

    Preheat your grill or grill pan over medium-high heat.

    Place the skewers on the grill and cook for about 8-10 minutes, turning occasionally. Brush the skewers with the teriyaki sauce during the last few minutes of grilling.
