Prepare Batter

    Mix Dry Ingredients

    In a mixing bowl, combine the all-purpose flour, baking powder, and salt. Mix well to combine the dry ingredients.

    Mix Wet Ingredients

    In another bowl, whisk together the dashi stock (or water) and eggs until well combined.

    Combine Wet and Dry Mixtures

    Gradually pour the wet mixture into the dry mixture, stirring gently until smooth and well combined. Avoid over-mixing.

    Rest Batter

    Let the batter rest for about 10 minutes.

Prepare Fillings

    Prepare Fillings

    Prepare the fillings by dicing the cooked octopus into small pieces. Finely chop the green onions and pickled ginger.

Cook Takoyaki

    Preheat Takoyaki Pan

    Preheat a takoyaki pan over medium heat and lightly grease the molds with oil.

    Fill Molds with Batter

    Pour the batter into each mold, filling them about 3/4 full.

    Add Fillings

    Add a small amount of diced octopus, green onions, pickled ginger, and ten-kasu into each mold.

    Turn Takoyaki

    When the edges start to cook and firm up, use a skewer or chopsticks to turn the balls, allowing the uncooked batter to flow into the mold.

    Cook Until Golden

    Cook for an additional 3-4 minutes, turning them occasionally until they are golden brown and crispy on the outside.

Serve

    Plate Takoyaki

    Remove the takoyaki balls from the pan and place them on a plate.

    Drizzle with takoyaki sauce and mayonnaise, then sprinkle with aonori and bonito flakes.
