Method

Prepare Sushi Rice

    Rinse the Rice

    In a fine-mesh strainer, rinse 2 cups of sushi rice under cold water until the water runs clear. This removes excess starch.

    Cook the Rice

    Combine the rinsed rice and 2.5 cups of water in a rice cooker. Cook according to the rice cooker's instructions, or bring to a boil in a pot, then reduce heat, cover, and simmer for 20 minutes.

    Season the Rice

    In a small saucepan, combine 3 tablespoons of rice vinegar, 1 tablespoon of sugar, and 1 teaspoon of salt. Heat over low until the sugar dissolves. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Let it cool to room temperature.

Prepare Sashimi

    Slice the Fish

    Using a sharp knife, slice 200 grams each of fresh salmon, tuna, and yellowtail into thin, even slices. Arrange the sashimi on a chilled plate.

Prepare Sushi Rolls

    Prep Vegetables

    Julienne the cucumber and slice the avocado into thin strips.

    Assemble the Sushi Rolls

    Place a nori sheet shiny side down on a bamboo sushi mat. Wet your hands and spread a thin layer of sushi rice over the nori, leaving a 1-inch border at the top. Lay a few strips of cucumber and avocado in the center. Roll the sushi tightly from the bottom using the mat, sealing the edge with a little water. Repeat for the remaining nori sheets.

    Slice the Rolls

    Using a sharp knife, slice the rolls into 6-8 pieces each. Arrange on a serving platter.

    Serve

    Serve the sushi rolls with soy sauce, wasabi, and pickled ginger on the side.
