Method
Prepare Sushi Rice

Rinse the Rice
Rinse 2 cups of sushi rice under cold water until the water runs clear to remove excess starch.

Cook the Rice
In a rice cooker or pot, combine the rinsed rice and 2.5 cups of water. Cook according to rice cooker instructions or bring to a boil, then reduce to low heat, cover, and simmer for 20 minutes.

Season the Rice
In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Allow the rice to cool to room temperature.

Prepare Shrimp
If using raw shrimp, ensure they are cooked and peeled. Set aside.

Prepare Crab Meat
If using imitation crab, shred or cut into thin strips.
Assemble Sushi Rolls

Lay Out Nori
Place a sheet of nori on a bamboo sushi mat, shiny side down.

Spread Sushi Rice
Wet your hands to prevent sticking and take a handful of sushi rice. Spread it evenly over the nori, leaving about 1 inch at the top edge.

Roll the Sushi
Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to form a tight roll. Seal the edge with a little water.

Slice the Rolls
Using a sharp, wet knife, slice the roll into 8 equal pieces.
Prepare California Roll

Prepare the Roll
Repeat the rolling process using crab meat, avocado, and cucumber. Sprinkle sesame seeds on the rice before rolling.

Slice the California Roll
Slice the California roll into 8 equal pieces, just like the regular sushi rolls.
Serve

Plate and Serve
Arrange the sushi pieces on a platter. Serve with soy sauce and mayo for dipping.
