Prepare Sushi Rice

Rinse the Rice
Rinse 1 cup of sushi rice under cold water until the water runs clear to remove excess starch.

Cook the Rice
Combine the rinsed rice and 1.5 cups of water in a rice cooker or a pot. Cook according to the rice cooker's instructions or bring to a boil and then simmer on low heat for 20 minutes. Remove from heat and let it rest for 10 minutes.

Season the Rice
In a small bowl, mix 2 tablespoons of rice vinegar, 1 teaspoon of sugar, and 0.5 teaspoon of salt until dissolved. Pour the mixture over the cooked rice and gently fold it in with a wooden spoon. Allow the rice to cool to room temperature.

Prepare the Crab Sticks
Cut the crab sticks into halves or thirds depending on the size you prefer for your rolls.

Assemble the Sushi Rolls

Lay Out the Nori
Place a sheet of nori, shiny side down, on a bamboo sushi mat or a clean surface.

Spread the Rice
Wet your hands to prevent sticking and take a handful of sushi rice, spreading it evenly over the nori, leaving about an inch at the top.

Roll the Sushi
Using the bamboo mat, carefully roll the nori away from you, tucking the filling inside. Roll tightly but not too tight to avoid squeezing out the fillings.

Slice the Rolls
Using a sharp knife, slice the roll into 6 to 8 pieces. Wipe the knife with a damp cloth between cuts for cleaner slices.
Serve the Sushi

Plate the Sushi
Arrange the sushi rolls on a serving plate. Include the California roll and eel avocado roll.

Add Soy Sauce and Wasabi
Serve with soy sauce and a dollop of wasabi on the side for dipping.
