Sushi Preparation

    Prepare the Sushi Rice

    Rinse the sushi rice under cold water until the water runs clear. Drain well. In a medium saucepan, combine the rinsed rice and water. Bring to a boil over medium heat. Once boiling, reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let it sit, covered, for another 10 minutes.

    Season the Rice

    In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Transfer the cooked rice to a large bowl and gently fold in the vinegar mixture using a wooden spoon or rice paddle. Let the rice cool to room temperature.

    Prepare the Fillings

    While the rice is cooling, slice the fresh tuna, cucumber, and avocado into thin strips.

    Assemble the Sushi Rolls

    Lay a nori sheet on a bamboo sushi mat, shiny side down. Wet your hands to prevent sticking, then grab a handful of sushi rice and spread it evenly over the nori, leaving about an inch at the top edge. Layer the tuna, cucumber, and avocado across the center of the rice.

    Roll the Sushi

    Using the sushi mat, gently lift the edge of the mat closest to you and start rolling the sushi away from you, pressing lightly to form a tight roll. Continue rolling until you reach the exposed edge of the nori. Wet the edge with a little water to seal it. Repeat with the second sheet of nori.

    Slice the Rolls

    Using a sharp knife, slice each roll into 4 equal pieces, wiping the knife with a damp cloth between cuts to ensure clean edges.
