Method
Preparing Sushi Rice

Rinse the Rice
In a fine-mesh strainer, rinse the sushi rice under cold water until the water runs clear. This removes excess starch.

Cook the Rice
Add the rinsed sushi rice and 2 1/2 cups of water to a rice cooker and cook according to the manufacturer's instructions. Alternatively, bring to a boil in a pot, then reduce heat and simmer for 20 minutes.

Season the Rice
In a small bowl, mix rice vinegar, sugar, and salt. Once the rice is cooked, transfer it to a large bowl, and gently fold in the vinegar mixture. Let it cool to room temperature.

Assemble Sushi Rolls
Place a nori sheet on a bamboo mat. Wet your hands and take a handful of sushi rice, spreading it evenly over the nori, leaving a 1-inch border at the top. Lay slices of cucumber, avocado, and crab meat in a line across the center of the rice.

Roll the Sushi
Using the bamboo mat, roll the sushi away from you, applying gentle pressure to form a tight roll. Seal the edge with a little water.

Slice the Rolls
Using a sharp knife, slice the sushi roll into 6-8 pieces. Repeat with remaining ingredients.

Slice the Fish
Using a sharp knife, slice the fresh salmon, tuna, and yellowtail into thin pieces, about 1/4 inch thick.

Plate the Sashimi
Arrange the sashimi slices on a serving platter and serve with wasabi and pickled ginger on the side.

Serve the sushi rolls and sashimi together on a large platter, accompanied by soy sauce for dipping.
