Sushi Rice Preparation

Rinse the rice
Place the sushi rice in a fine-mesh strainer and rinse under cold water until the water runs clear to remove excess starch.

Cook the rice
In a medium saucepan, combine the rinsed rice and water. Bring to a boil over high heat, then reduce to low, cover, and simmer for about 20 minutes or until the water is absorbed.

Season the rice
Once cooked, transfer the rice to a large bowl. In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Drizzle this mixture over the warm rice and gently fold to combine. Allow the rice to cool.

Combine the crab and spicy mayo
In a separate bowl, mix the cooked crab meat with the spicy mayo until well combined. Set aside.
Rolling the Sushi

Prepare the rolling station
Lay a bamboo sushi mat on a flat surface and place a sheet of plastic wrap over it. This will prevent sticking.

Spread the rice
Wet your hands with water to prevent sticking. Take a handful of sushi rice and spread it evenly over a nori sheet, leaving about 1 inch at the top edge.

Add the filling
In the center of the rice, layer the crab mixture, mashed avocado, and sprinkle tempura bits on top.

Roll the sushi
Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to form a tight roll. Once rolled, use the mat to shape it, pressing lightly.

Cut the roll
With a sharp knife, wet the blade to prevent sticking, and cut the roll into 8 equal pieces.

Arrange the sushi pieces on a plate and serve with wasabi and pickled ginger on the side.
