Preparation
- 1
Prepare the Codfish
Rinse the codfish fillets under cold water and pat them dry with paper towels. Cut the fillets into smaller pieces if desired, about 2-3 inches long.
- 2
Season the Codfish
Sprinkle salt and black pepper evenly over the codfish pieces. Let them marinate for about 10 minutes while you prepare the batter.
Batter Preparation
- 3
Mix the Batter
In a mixing bowl, whisk together the all-purpose flour, eggs, salt, and black pepper until the mixture is smooth and well combined.
Cooking
- 4
Heat the Oil
In a large frying pan, heat the vegetable oil over medium heat. Allow the oil to become hot, but not smoking.
- 5
Coat the Codfish
Dip each piece of seasoned codfish into the batter, making sure to coat it evenly on all sides.
- 6
Pan-fry the Codfish
Carefully place the coated codfish pieces into the hot oil. Fry for about 3-4 minutes on each side, or until golden brown and crispy. Depending on the size of your pan, you may need to do this in batches.
- 7
Drain Excess Oil
Once cooked, transfer the codfish to a plate lined with paper towels to absorb any excess oil.
