Slice the cucumber into thin rounds. Toss with salt and let sit for 10 minutes. Rinse and drain. Mix with 1 tablespoon of soy sauce, 1 tablespoon of sesame oil, and sprinkle with sesame seeds.

Julienne the carrot and toss it with 1 tablespoon of sesame oil, a pinch of salt, and red pepper flakes to taste. Let it marinate for 10 minutes.

Spinach Side Dish
Blanch the spinach in boiling water for 1 minute, then drain and rinse under cold water. Squeeze out excess water and mix with 1 tablespoon of sesame oil, minced garlic, and salt to taste.

Mung Bean Sprouts
Blanch the mung bean sprouts in boiling water for 2 minutes. Drain and rinse under cold water. Mix with 1 tablespoon of soy sauce, minced garlic, and a drizzle of sesame oil.

Slice the radish thinly and toss with salt and red pepper flakes to taste. Let it sit for 10 minutes, then mix with 1 tablespoon of sesame oil and serve.
