Preparing the Calamari

Clean the Squid
Rinse the medium sized squid under cold water. Remove the head, tentacles, and internal organs. Cut the squid body into rings about 1/2 inch thick.

Prepare the Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, and garlic powder. Gradually whisk in the cold water until the batter is smooth and slightly thick.
Frying the Calamari

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil to 180°C (350°F). Use a thermometer to check the temperature.

Coat the Squid
Dip the squid rings into the batter, ensuring they are fully coated.

Fry the Squid
Carefully place the coated squid rings into the hot oil. Fry in batches to avoid overcrowding, for about 2-3 minutes or until golden brown. Remove the fried calamari using a slotted spoon and place them on a plate lined with paper towels to absorb excess oil.
Preparing the Dipping Sauce

Mix the Sauce
In a small bowl, combine mayonnaise, sriracha sauce, and lemon juice. Mix well until all ingredients are combined. Add salt to taste.
