Prepare the Filling

    Chop the Shrimp

    Finely chop the peeled and deveined shrimp using a knife or food processor, leaving some chunks for texture.

    Mix the Ingredients

    In a mixing bowl, combine the chopped shrimp, ground pork, chopped water chestnuts, green onions, minced garlic, minced ginger, soy sauce, sesame oil, salt, and white pepper. Mix well until all ingredients are thoroughly combined.

Assemble the Dumplings

    Fill the Wrappers

    Place a wonton wrapper on a clean surface. Spoon about 1 tablespoon of the filling mixture into the center of the wrapper.

    Form the Dumpling

    Bring the edges of the wrapper together to form a pouch, pinching to seal tightly. Repeat with the remaining wrappers and filling.

Steam the Dumplings

    Prepare the Steamer

    Fill a steamer pot with water and bring it to a boil. Line the steamer basket with parchment paper or cabbage leaves to prevent sticking.

    Steam the Dumplings

    Place the dumplings in the steamer basket, making sure they are not touching. Cover and steam for about 8-10 minutes, or until the dumplings are cooked through and translucent.

    In a small bowl, combine soy sauce, rice vinegar, and chili oil. Adjust the chili oil to taste.
