Tofu Preparation

    Press the Tofu

    Wrap the firm tofu in a clean kitchen towel and place a heavy object on top to press out excess moisture. Let it sit for about 30 minutes.

    Cut the Tofu

    After pressing, cut the tofu into 1-inch cubes.

    Coat with Cornstarch

    Place cornstarch in a shallow dish and roll each tofu cube in the cornstarch until fully coated.

    Heat Oil

    In a deep pan or wok, heat vegetable oil over medium-high heat until it reaches 180°C (350°F).

    Fry the Tofu

    Carefully add the tofu cubes to the hot oil in batches. Fry until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

Dashi Sauce

    Prepare the Dashi Sauce

    In a small saucepan, combine the dashi stock, soy sauce, and mirin. Bring to a gentle simmer over low heat, stirring occasionally. Remove from heat after 5 minutes.

Garnish

    Assemble the Dish

    Place the fried tofu cubes on a serving plate. Drizzle the dashi sauce over the tofu.

    Add Garnishes

    Sprinkle bonito flakes, shredded nori, and chopped green onions on top of the tofu for garnish.
