Preparing the Tofu

    Pressing the Tofu

    Place the firm tofu on a cutting board, and slice it into 1-inch cubes. Wrap the tofu in a clean kitchen towel and place a heavy object on top to press out excess moisture. Let it sit for about 15-20 minutes.

    Coating the Tofu

    Once pressed, take the tofu cubes and gently dust them with cornstarch, ensuring all sides are evenly coated. Shake off any excess cornstarch.

Making the Dipping Sauce

    Combining Ingredients

    In a small saucepan, combine the dashi stock, soy sauce, and mirin. Heat over medium heat until the mixture is warm but not boiling.

    Finishing Touches

    Remove from heat and stir in the finely chopped green onions. Set aside to cool slightly.

Frying the Tofu

    Heating the Oil

    In a deep frying pan or wok, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F).

    Frying the Tofu

    Carefully add the cornstarch-coated tofu cubes to the hot oil in batches. Fry for about 3-4 minutes until they are golden brown and crispy. Use a slotted spoon to remove the tofu and drain on paper towels.

Serving

    Plating the Dish

    Arrange the fried tofu on a serving plate. Drizzle the dipping sauce over the tofu or serve it in a small bowl on the side.

    Garnishing

    Top the dish with grated daikon and additional chopped green onions if desired. Serve immediately.
