Eel Preparation

    Clean the Eel

    Start by cleaning the eel under cold running water. Use a sharp knife to remove the skin and guts. Rinse thoroughly and pat dry.

    Season the Eel

    Sprinkle the eel pieces with salt and let them sit for about 15 minutes to absorb the flavor.

    Prepare the Grill

    Preheat your grill to medium heat and lightly oil the grates with cooking oil to prevent sticking.

BBQ Sauce Preparation

    Mix the Sauce Ingredients

    In a bowl, combine soy sauce, mirin, sake, brown sugar, sesame oil, minced garlic, and grated ginger. Stir until the sugar dissolves.

    Marinate the Eel

    Place the seasoned eel in a shallow dish and pour half of the BBQ sauce over it. Let it marinate for at least 30 minutes.

Grilling

    Grill the Eel

    Place the marinated eel on the preheated grill. Cook for about 5-7 minutes on each side, brushing with additional BBQ sauce occasionally until the eel is cooked through and has nice grill marks.

Serving

    Once the eel is cooked, remove it from the grill and place on a serving plate. Garnish with fresh red leaf lettuce.
