Eel Preparation

    Prepare the Eel

    Clean the fresh water eel and cut it into fillets. Remove any bones if necessary.

    Make the Sauce

    In a small bowl, mix together soy sauce, mirin, sugar, and sake. Stir until the sugar is dissolved.

    Broil the Eel

    Preheat the broiler. Place the eel fillets on a broiler pan and brush generously with the sauce. Broil for about 5-7 minutes on each side, or until the eel is cooked through and caramelized. Brush with more sauce as needed during cooking.

Rice Preparation

    Rinse the Rice

    Rinse the short grain rice under cold water until the water runs clear. This helps to remove excess starch.

    Cook the Rice

    In a rice cooker or pot, combine the rinsed rice and water. Cook according to rice cooker instructions or bring to a boil, then reduce heat to low and cover for about 18-20 minutes until the water is absorbed and rice is tender.

Assembly

    Serve the Unadon

    Once the eel is cooked and the rice is ready, fluff the rice with a fork and divide it into bowls. Top each bowl with the broiled eel fillets. Drizzle any remaining sauce over the eel.

    Sprinkle chopped green onions and nori strips over the top for garnish. Serve hot.
